What can I use instead of carbopol ultrez 30 to keep the meat close together?

Hello, in the Carbomer category, all of them are made from Acrylic acid as well. It gives a similar texture, although the manufacturer states that each Carbopol has a slightly different texture. but in practice If not an expert It's hard to see the difference.
