- pH Adjuster (e.g., 10% NaOH solution): As needed (add drop by drop to adjust pH to 5.5-6.5)
Instructions:
- Combine Phase A ingredients and heat to 70-75°C. Ensure Xanthan Gum is fully hydrated.
- Combine Phase B ingredients and heat to 70-75°C.
- Slowly add Phase B to Phase A while homogenizing/stirring vigorously for 3-5 minutes.
- Switch to slow stirring and cool the emulsion.
- When the temperature drops below 40°C, add Phase C ingredients one by one, mixing well after each addition.
- Check and adjust the pH to 5.5-6.5.
- Package the cream.
