Mixing Method for Cream Makers (Emulsifiers)

Question

I'm trying to understand the correct mixing method for cream makers (emulsifiers). Does the method (adding water to oil or oil to water) depend on whether the emulsifier is soluble in water or oil? Or does it depend on the specific instructions for each product?

For example, what are the mixing methods for:

  • Luxury Cream Maker
  • Light Cream Maker
  • Satin Cream Maker

Answer

The technique for mixing creams, whether to add water to oil or oil to water, primarily depends on the type of Emulsifier used. It does not solely depend on whether the Emulsifier is soluble in water or oil.

Each type of Emulsifier has a different mechanism of action and properties. The manufacturer specifies the most suitable mixing method to achieve a stable and desired cream texture.

Based on the information provided by the Staff:

  • Luxury Cream Maker (ID 645): The mixing method is to mix it in the Water-phase first.
  • Light Cream Maker (ID 141): Can be mixed in either the oil-phase or the Water-phase. More details should be checked on the product page.
  • Satin Cream Maker (ID 247): The mixing method is to mix it in the Water-phase first.

Therefore, even though some Emulsifiers may be soluble in both water and oil, the recommended mixing method might specify adding it to one phase first for the Emulsifier to function optimally.

For example, with Flora Solve (ID 334), as mentioned by the Staff, mixing it incorrectly (adding water to Flora Solve instead of adding Flora Solve to water) results in a different texture than intended (a gel texture instead of a clear liquid).

In summary: The mixing technique (whether to add water to oil or oil to water) must follow the "วิธีการผสม" (mixing method) specified for that particular Emulsifier. This information is usually available on the product page or technical data sheet. Following the manufacturer's recommendation is crucial to achieve the desired results.
