Selecting Emulsifiers for Light, Non-Sticky Cream (Two-Phase, No High-Speed Mixer)
Question
I am formulating a cream using a two-phase mixing method where the emulsifier is melted into the oil phase.
My goal is to achieve a lighter, less sticky cream texture.
I do not have a high-speed mixer.
Could you recommend emulsifiers that can be used with heat in the oil phase and provide a lighter feel compared to traditional waxes, suitable for this method and desired texture?
Answer
Based on your preference for a two-phase mixing method where the emulsifier is melted into the oil phase, and your goal to achieve a lighter, less sticky cream texture without a high-speed mixer, here are some emulsifiers that can be used with heat in the oil phase and are known to provide a lighter feel compared to traditional waxes:
- Soft Cream Maker™: This emulsifier requires heating to 60-70°C to dissolve in the oil phase. It is designed to create a super soft cream texture and forms a liquid crystal structure which gives a nice sheen. Note that the cream will take about 48 hours to fully set and thicken after mixing.
- Velvet Cream Maker™: This emulsifier is dissolved in the oil phase with heat. It provides a matte, velvet-like texture with a light, smooth feel and helps reduce shine, which can contribute to a less sticky sensation.
- Sucrose Cream Maker™: This is a natural-based emulsifier that is dissolved in the oil phase using heat. It is specifically noted for creating a lightweight, non-oily, dry skin feel and a silky, velvety texture, which aligns well with your goal of avoiding a heavy, sticky cream.
While some emulsifiers are designed for cold process (no heat) and can be added to the oil phase (like Light Cream Maker™ or Silk Cream Maker™), they are liquids and don't fit the "melting" aspect of your preferred method. The emulsifiers listed above are solids or flakes that melt into the oil phase with heat and are described as providing lighter textures than typical heavy cream makers or waxes.
To further reduce the heavy or sticky feel, you can also consider reducing the percentage of the oil phase in your formulation.
