Isomaltulose (Crystal) is a fully digestible carbohydrate sweetener with approximately 50% of the sweetness of sucrose and 4 kcal per gram. It is suitable for foods and beverages where a lower glycemic response versus sucrose is desired.

- Typical use amounts: beverages 3–6 g/serving; bakery/confectionery 5–15% of total sugars (adjust to target sweetness and texture).

- Sweetness: ~50% compared with sucrose; allows partial sugar replacement while retaining bulk.
- Dissolution (crystal): dissolve by stirring in water; warm water or agitation improves dissolution rate.
